At some point I memorized most of this, but to be on the safe side I figured I’d put a reference page here that lists safe internal temperatures for cooked meat. So straight from the USDA Food Safety and Inspection Service guidelines, I offer up the following table for your use:

Remember that the listing above are minimum recommended temperatures for general safety purposes. You will likely find that certain dishes will require a higher internal temperature that what is listed above to meet your personal taste preferences.
