Halibut and Mini Calzones

img_0449What happens when you have fresh fish, leftover pizza fixin’s, and not a lot of patience?  You get tonight’s meal…

On the grill:

  • Baked Halibut with Onions, Mushrooms, and Tomato
  • Mini Calzones
  • Brandied Pears

It rained all morning, so naturally I had to BBQ this evening.  So one trip to Costco later, I have a full freezer and some very fresh halibut.  And a refrigerator that still has leftover dough and sauce from the pizza on Tuesday.  Not wanting a fish pizza, I instead cooked the fish over indirect heat with a covering of thinly sliced onions, mushrooms, and tomatoes.  Add some rosemary, basil, garlic, and lemon pepper and you have a real nice and easy supper.

Since I didn’t want to fool around with the pizza stone, I divided the pizza dough into 4 sections, rolled it out, brushed on a layer of the leftover sauce, and tossed on some grated mozzarella cheese.  I tried rolling the first one up into a breadstick, but since that didn’t work so well the other three were folded over and pinched together like mini calzones.  They went directly on the grill (but not over the coals) at the same time as the fish.  About 15 minutes later, we were ready to eat.

The pears went on the grill as the other food came off.  By the time we were done eating, the pears were ready to be served up for dessert.  As usual, they made a fine end to another good meal from the Weber OTG.

As you can see, we got about 1/2 inch of rain today.  It was all earlier in the day, and the forecast for tomorrow is partly cloudy and warmer.  The pork butts are already being prepped; tomorrow is pulled pork.
