Pulled Pork Tacos

img_0475Ok, so this isn’t technically BBQ, but it is what you do with leftover pulled pork from a previous cook.  This may be a blog post, but I wouldn’t be surprised if it gets turned into a page in the recipe section at some point in the future.

We had so much pork left over from Saturday’s cook that I decided to work on cleaning out the refrigerator rather than adding to the stack of Ziploc containers.  I started with 1/2 of an onion and a bell pepper (one of the colorful orange ones), sliced them up thin, and sauteed them in a small amount of olive oil.  After they had softened up a bit, I added some handfuls of the pulled pork, a dash of Tabasco chipotle sauce, heated the mix up a little more, and then added a sliced tomato.  After adding the tomato the mix was immediately pulled from the fire, stirred well, and portioned into corn tortillas that were cooked in a bit of olive oil while the onions and peppers were on. They were then topped with a bit of shredded cheddar cheese and some chopped cilantro.

For those of us that like our tacos a bit spicier, some Secret Aardvark Habanero Sauce did the trick.  All in all, an extremely easy meal, and one that will likely be repeated often.
