Chicken Curry

I don’t know about the rest of you, but Chicken Curry doesn’t come to mind when I think of BBQ.  However, tonight we put an end to another misconception about what can and can’t be fixed on a grill.

The back story behind tonight’s cook has something to do with Trader Joe’s offering up samples of different curry sauces and a desire to get away from putting out fires at work and lighting up a fire of my own.  So I fired up the Weber OTG and went to play.  Chicken breasts got dusted with some red chili powder, granulated garlic, fresh ground black pepper, and a pinch of salt.  Onions, carrots, and potatoes were chopped into small chunks and tossed together in a grill basket.  All of this went on the grill, and a pot of brown rice was put on the stove.

About 30 minutes later, the veggies and chicken came off the grill, were mixed together in a casserole dish, and smothered with a bottle of Trader Joe’s Thai Yellow Curry Sauce. The mix was served over the brown rice, and although the wife complained that the potatoes should have been something else (turnips?), I noticed she had seconds and licked the spoon.  The kids apparently liked the results as well; there certainly wasn’t anything left in the casserole dish at the end of the meal.

It cooled off today, and rained a bit this morning.  The sun was out by the time it came to cook, and no rain dampened tonight’s efforts.  A nice end to an otherwise crappy day at work…
