Another Sunday Smokeout

Another Sunday, another excuse to smoke.  And since I don’t do tobacco (wacky or otherwise), it was time to pull out the WSM and go to work.

On the grill:

How better to follow Dozer Days (sunburn, pulled muscles, damaged ego, lots of fun anyway) than with a bunch of smoking meat.  The pork tenderloin came in four pieces, so it made sense to use four different rubs.  One got some basic rib rub, another a topping of some sweet-hot mustard that was taking up space in the refrigerator.  The other two were rubbed with herb mixes; one a sage and garlic salt, the other with a rosemary spice mix.  In spite of the fact they were left on the smoker about 15 minutes longer than they should have and were a tad drier that we prefer, they still tasted real good, and the leftovers will make great sandwiches and salad mixings during the week.

It appears to have become a tradition to smoke burgers now while other things are on the WSM.  I think we are all hooked on these as I have made more of these in the past month than all last year.  A light dusting of chili powder and mesquite grill spice, put them on the smoker, and add a slice of cheese about 30-45 minutes later when the internal temperature reaches 145, then take them off a few minutes later when the cheese melts.  What could be easier?  Slow fast food is what it is all about.

What can I say about the fatty, other than yum?  This one was made with two pounds of JD hot, some mozzarella cheese, bacon, and the leftover OPM from earlier in the week.  What a great way to set up breakfast sandwiches for the rest of the week.

Speaking of yum, there is no better way to cook BBQ beans than on the lower shelf of the WSM, catching all the drippings of whatever is cooking above them.  Today’s were no exception to this, in spite of the fact I substituted some other prepared beans for the normal Bush’s vegetarian beans.  As much as I might hate to say it, I couldn’t taste any difference.  I guess I will have to do some experimentation with some other prepared beans the next time I fix these.  Bush’s beans are great, but they are a tad more expensive than some of the other brands out there.
