Chicken Taco Night

Originally it was going to be beef taco night made with leftovers from yesterday’s brisket adventure, but I ran into a bit of a snag.  You have to have leftover brisket to make tacos with.  Between the kids and the wife, I managed to get two small pieces of brisket earlier today for a sandwich, and the rest disappeared before my eyes.

So I pulled some chicken breasts out of the freezer, fired up the Performer, and proceeded undeterred (albeit more than a bit disappointed) with the taco plan.  I sliced up an onion and some mini peppers and tossed them on the grill with the chicken breasts, and wandered off to the kitchen to chop some tomatoes and make a batch of fresh guacamole.

To say these were good would be an understatement, and I am disappointed no more.  I’m gonna let the pictures speak for themselves.  And possibly the best part of this meal is that it got pulled from the grill seconds before a thunderstorm cut loose and started raining on us.  Sometimes things just work out for the best…
