Pizza Again

Don’t say you weren’t warned…  In our never-ending quest to improve on grilled pizza we once again placed it on the menu (and the grill).  Tonight’s offering included leftovers from previous meals, a BBQ sauce theme, and actual homemade dough.  On with the show…

The dough for both pizzas was something the wife made up in the morning and let rise all day long.  It consisted of whole-wheat bread flour, water, yeast, honey, olive oil, salt, wheat germ, and dried Italian seasoning mix.   The sauce was Sweet Baby Ray’s straight from the bottle and spread thinly over the crust and topped with mozzarella cheese.  The meat for pizza number one was leftover chicken breasts from last night, and pizza number two was the recipient of leftover pulled pork liberated from the freezer.  Both pizzas were then finished off with some chopped fresh cilantro, sliced onions, and mini-peppers.  Well, at least half of both pizzas got the onions and peppers; we have a few contrarians in the house that insist on not having certain items show up on their pizza.

The results were very good.  The dough didn’t rise as much as hoped for, so the crust stayed pretty thin throughout.  Didn’t affect the taste though, it was very flavorful and crisp.  The chicken pizza was a bit on the dry side; I purposely used a very small amount of the BBQ sauce so as to not overpower the pizza (a common failing of other BBQ-flavored pizzas) and didn’t add any at all to the chicken breasts.  Next time around I will either use pulled chicken (thighs) or add a little sauce directly to the meat before adding it to the pizza.

Speaking of pulled meat, the pulled pork pizza was the hit of the evening.  This was by far and away the best tasting pizza from the grill so far.  About the only way this one might have been improved would be a bit more crust around the edge, and my wife has agreed to monkey with the dough recipe to see what can be done.  Once we get that dialed in, I will post directions in the Recipe section; at the rate we are going I will have to create a separate section just for pizza.

Did I mention the weather  was nice too?
