Puss in Boots Sad Eyes

If you saw the title and came looking for large steaks on this post, get over it quickly.  Today was my annual eye examination, concluding with the eye drops that fuzz your vision and make your eyes look like Puss in Boots from Shrek 2.  As a result, the need to BBQ was tempered by an inability to see well, so the cooking had to be easy or it wasn’t happening.  So on the grill tonight was mahi-mahi with fresh peach-pineapple salsa and grilled pineapple for dessert.

The mahi-mahi was lightly dusted with basil and fresh ground black pepper, then cooked indirectly for about 15 minutes.  The peach-pineapple salsa was something I threw together out of ingredients on hand, and turned out to be the hit of the evening.  This one will make its way to the recipe file pretty soon anyway, so without further adieu I will go ahead and share right now since I’m going to have to write it all down anyway.


  • 2 fresh peaches, peeled and chopped
  • 1/2 cup fresh pineapple, chopped
  • 1 small lime
  • 1/4 sweet onion, chopped
  • 3 tbs. fresh cilantro, chopped
  • 3 tbs. jalapeño peppers, finely chopped
  • 2 tsp. honey

Add all the ingredients together in a bowl and mix well.  Chill and let sit for at least 30 minutes prior to serving.  Here’s a picture:


As for the rest of the meal, you might as well see how it turned out as well.  First up, mahi-mahi on the grill with a piece of salmon added for the last-minute unexpected (but not unappreciated) arrival of oldest daughter.  For those interested, the salmon got the same spice treatment as the mahi-mahi.

Last but not least, more pineapple was grilled for dessert.  I actually followed the recipe for a change…


And here’s what the finished product looked like on its way to being served with vanilla ice cream.  I floated the idea of adding some melted chocolate, but apparently we didn’t have the right kind in the house to do this.  At least that is what my wife told me, and she is the expert in all things chocolate.  Just ask her…


Not a bad effort considering the fuzzy vision…
