School’s Out

No more pencils, no more books, no more teacher’s dirty looks…  Today was the last day of school for the kids.  Would have been earlier if it hadn’t been for all those snow days they had off earlier in the year.  Didn’t stop us from barbecuing, put it did keep them out of school.  At any rate, what better way to celebrate the beginning of summer vacation than with some hot dogs, lime-tequila sausages with onions and peppers, Cajun grill fries, and some grilled bananas for dessert.


Nothing special was done with the dogs and sausages other then to throw them on the grill and let them cook.  The onions and peppers got the foil treatment; they were sliced thin and tossed in a foil bag with some fresh cilantro and a dash of olive oil.  Sometimes simple things are the best; the onions caramelized while in the bag and were some of the sweetest I’ve had in awhile.  Naturally they were served over the sausages on a hot dog bun with some plain old yellow mustard.  Talk about some good eatin’…


The Cajun Grill Fries were the latest variation on Trashbag Potatoes, but cut in the tradition of Sweet Potato Grill Fries.  I took 8 decent sized yellow potatoes and cut them into french fry shapes, then gave them the trashbag treatment in a vegetable bag with olive oil, granulated garlic, a little salt, and some McCormicks Bayou Cajun Seasoning mix.  From there they were dumped in a grill basket and cooked indirectly for about 45 minutes.  These were recipe worthy; my wife was swiping them out of the basket before I could even get them in the serving bowl.  I’ll be posting the instructions in the Recipe section later this evening, so check back soon if you want to cook up a batch for yourself. For dessert it was grilled bananas over vanilla ice cream with chocolate chips.  Now this is the way to start a summer vacation…
