Multnohah Falls

This morning we hiked to the top of Multnomah Falls in Oregon.  It was a lot of fun, great exercise, and beautiful scenery.  For anyone finding themselves in Portland OR with an available Sunday morning I highly recommend driving out to at least see the falls.  Better yet, walk to the top, and then on the return stop and have Sunday brunch at the lodge restaurant.  It was a bit pricey, but still a great value as it was one of the best brunches I’ve had since moving up here over 10 years ago.

When you add all-you-can-eat to one of the best brunches going, well, you know the story.  Any exercise gained by walking the mile-plus to the top of the falls (and down again) was pretty much offset by all the food we ate.  As a result, dinner was going to have to be something light.  So in honor of our excursion, I grilled some chicken breasts, OPM, and seasoned canned corn for dinner.

The chicken was sprinkled liberally with equal amounts of McCormick’s Montreal Chicken,  Barbecue Seasoning, and Bayou Cajun spice mixes, then lightly coated with some Sweet Baby Ray’s for the last few minutes of cooking.  The OPM deviated from the norm in that I was finally able to use up the rest of the Anaheim peppers we bought last week (instead of bell peppers), and the corn got the usual garlic salt, butter, fresh ground black pepper, and basil seasoning before being wrapped up in the foil.

Easy, light, and hit the spot.  Great way to wrap up a great day…
