More Curry Chicken

Oldest daughter called on the phone late this afternoon and wanted to know what I was doing tonight. This is generally a not-so-subtle way of inviting herself over for dinner, so I skipped right to the chase and asked her what she wanted me to cook. After a round or two of “you really don’t want to know what I can do with a chicken”, curry chicken was on the menu again.

As before, chicken breasts were well spiced (cayenne, chili powder, granulated garlic, and a dash of salt) and put on the grill (indirect) with some cubed veggies (potatoes, carrots, onion, and yellow bell pepper) sprinkled with some EVOO and curry powder. And in case my eighth grade English teacher is reading this (unlikely), yes, that was a run-on sentence…


The veggies went on the grill first, and about 15 minutes later were followed by the chicken breasts. Another 30 minutes and the whole shebang came off the grill. The chicken was cubed, mixed with the veggies and some fresh cilantro, and covered with Bombay Authentics Korma Luxury Curry Sauce.


The curry was served over brown rice, and was pretty good. This was the first time we used this particular brand of sauce; it wasn’t as spicy as the Trader Joe’s sauce we have used in previous incarnations of this dish. Personally I liked the TJ sauce better because it had more of a kick, but it also don’t see any leftovers for lunch tomorrow, so it couldn’t have been too bad…
