The sweet potatoes made me do it

I had some leftover sweet potatoes from the other night that were begging for some beef to be eaten with them. And who am I to disappoint a tuber? A quick trip to the freezer revealed a tri-tip roast that was in need of some time on the grill, and since it was a workday, simple and easy was on the menu. So I fired up a trusty Weber kettle and pretended I was in Santa Maria.


The roast got a simple light coating of salt, pepper, and granulated garlic. Apples are in season, so in the pot they went using the traditional recipe. On the grill they both went (away from the direct fire), on went the lid, and about 30 minutes later dinner was served.


You’ll forgive me for not showing the finished apples; I sort of forgot to take a picture when they were in the bowl. I’ll blame it on the on-and-off downpours of rain that kept happening yesterday.
