Meatloaf Monday

Some people have meatless Monday, but we don’t adhere to that sort of thinking. In fact, today was meatloaf Monday, courtesy of Bubba Ho-Keg. A pound of ground beef was combined with a chub of Jimmy Dean hot sausage and mixed in with some fairly standard meatloaf additions: oatmeal, onions, peppers, mushrooms, and an egg. Spices were kept simple; salt, pepper, granulated garlic, and some thyme. In the grill basket it went, and a light brushing of barbecue sauce topped it off.

Veggies tonight consisted of some roasted carrots, Yukon potatoes, celery, and onion with a splash of EVOO, about a 1/4 cup of white wine, salt, pepper, and more thyme.

The veggies went on Bubba Ho-Keg first in a covered container. After about 30 minutes at 400°F the meatloaf joined the veggies, and about 90 minutes later dinner was served.

I don’t know what other people call comfort food, but between the weather (cold and rainy), the burst pipes over the weekend, and the normal Monday madness associated with working for a living, this meal really hit the spot and qualifies in my book.

whoop whoop… been so long since i did a meat loaf… need to consider this soon!

I could go for a meatloaf sandwich right about now. You’re at work right now, right? I’ll just sneak into your fridge……

I work from home, so good luck with that. And you’re presuming that there were actually leftovers. I’m gonna have to start making bigger meatloafs as I really like meatloaf sandwiches… ;)
