When just one spatchcock won’t do…

… you gotta smoke two! In honor of the last day of the year that any sun breaks were expected not one but two chickens were spatchcocked and smoked on the 18″ WSM.

If you look close, you can see some nice baking potatoes on the lower grate; they not only got the benefit of some nice wine-oak and apple smoke, but also all the drippings from the chicken, which was seasoned with some garlic, thyme, and rosemary sprinkled on the cut side.

And yes, the green stuff on the plate was broccoli that was cooked in the house. I haven’t figured out a good way of cooking it on the smoker (other than in a pot with some liquid) so I took the lazy way out. All in all, not a bad meal, and it was done between the raindrops.
