The return of Bubba Ho-Keg

For a variety of reasons Bubba Ho-Keg hasn’t been used a lot in recent weeks. That trend ended tonight when it was hauled out and used to grill up some dinner.

Dinner consisted of chicken breasts dusted with Cajun Seasoning mix, red chili powder, granulated garlic, and just a hint of salt and pepper. They were paired with some grilled onions and peppers (lightly coated with EVOO, balsamic vinegar, and garlic salt) and mushrooms (more EVOO and balsamic vinegar, a pat of butter, and a splash of white wine; that’s what’s in the pot) and some brown rice (cooked indoors, I don’t have the patience to cook rice on the grill).

It all made for a tasty meal, and although I realize variations of this have been done before, you can’t always make new dishes every time out. Besides, the variations are what makes it interesting…
