Shh… don’t tell Pigdog we ate his pork loin

Ok, try to keep this one under your hat. Pigdog brought a huge pork loin out to the lake on one of our previous trips and it never got cooked. It was taking up space in the freezer, and the darn thing was so big that it kept the door from closing if it wasn’t positioned properly on the shelf.

So I brought it home with me earlier this week, thawed it out, stuffed half of it with cream cheese, dried apricots, apples, and blueberries, rubbed the other half in some rib rub, and threw them on Bubba Ho-Keg with some sweet potatoes.

The sweet potatoes escaped from the grill before the camera was employed, but you can see them on the plate below and will have to take my word that they were cooked on Bubba Ho-Keg.

That green stuff is broccoli, which officially makes this a meal that would really piss off Pigdog as he wouldn’t eat anything on the plate but the meat. Maybe I should save some of the pork for sandwiches in case he sees this and shows up on my doorstep tomorrow…

I saw it earlier, got a big laugh out of it, and already added Lio to the list of comics I read every day. It does pretty much sum up our philosophy of BBQ… ;)

Nice job on the purloined loin, I do have to try the stuffed one someday. That looks like a healthy plate.
