Another day, another healthy meal on Bubba Ho-Keg… This is what happens when you are busy all day, in a hurry, and have a wife that was very disappointed the night before when she thought she was going to be served teriyaki strips instead of chicken. So I fired up Bubba Ho-Keg and took care of dinner and a disappointed spouse all at once.
As you can see, teriyaki strips leave a lot of cleanup to do on the grill afterward. No big deal though; most of that disappears pretty easily once the grill is reheated, although it is time to drop by the hardware store and pick up a new brush since I threw out the old one today after prepping the grill. Turns out rosemary-lemon chicken also makes a big mess on the grill.
Carrots were on the menu again, and were cooked in the pot on the grill with a splash of white wine, a pat of butter, and a dash of fresh ground salt and pepper. The salad was the standard spring mix you can get at your local grocery along with some crushed walnuts and dried cranberries and mixed up well with some bleu cheese vinaigrette dressing.
If this keeps I might actually lose those 25 pounds by the end of the year…
