… is all I took of tonight’s efforts. I now present you with tonight’s meal: a fish taco where the grilled fish is hiding under the rest of the fixin’s.

There really is a nice piece of grilled cod under all that other stuff on the piece of flatbread moonlighting as a tortilla. And it really was cooked on Bubba Ho-Keg for about 5 minutes per side at about 350°F. And it was dusted with Cajun seasoning mix, red chili powder, and crushed cilantro. And it was really good by itself; SWMBO wasn’t in the mood for tacos, ate it straight up, and declared it worthy.
The sauce for the tacos was a mixture of sour cream, lemon juice, cilantro, cayenne pepper, black pepper, cumin, crushed red pepper, and salt. Not bad for a first attempt ever at making up a fish taco white sauce; it would have been better if the cilantro was fresh rather than dried and if there had been a fresh lime in the house that could have been used in place of the lemon.
Another successful Friday in Lent where no Catholic was harmed in the making or eating of dinner. At least in our house. I’m not responsible for what goes on elsewhere, there’s only so much a heathen can do…

Looks good! I would have used a combination of yogurt, mayonnaise, and sour cream and lime juice instead of lemon, but it makes me hungry!
Sometimes I just don’t feel like taking pictures, I want to eat, so I totally get it.
Did you use a tray or something for the fish? I have always had rough times grilling fish without a metal tray or a cedar board.
For smaller cuts of fish and the more delicate varieties I use a grill tray. You can see a picture of it in this post.
