Windy Chicken Fajitas

It rained sideways today at the lake. Which naturally led me to believe it was another perfect day to cook outdoors. I’m funny like that. On the menu was chicken fajitas. The OTG was put into service as the Performer is down for repairs. It’s missing a nut that holds the lid holder on; no one expects a grill with only one nut to be used for cooking. Besides, the OTG fits in the greenhouse better, which is where I had to go to escape the wind and sideways rain.

Chicken breasts were seasoned with red chili powder, cayenne pepper, and some Cajun seasoning mix. Onions and peppers went in the pan with a little EVOO, some taco seasoning mix, and a splash of red wine and chipotle flavored Tabasco sauce. Don’t tell Pigdog about the wine, I snuck it in there when he wasn’t looking.

Tortillas were heated up after the chicken was sliced thin and mixed in with the veggies. A few toppings later and it was time to eat.

The guacamole was especially tasty tonight. Must have been all that sideways rain. Or the fresh avocados. My money is on the avocados…
