No Easter Bunnies were harmed while making this meal…

… but the Easter Piggy didn’t fare so well. He was surrounded by sweet potatoes over a pot of beans, slathered with a mustard-molasses-brown sugar-ground glove mixture, and put on the WSM for a few hours.

When it got time to take everything off I forgot to take pictures of the finished product while it was still on the smoker. You’ll have to forgive me and suffer through with this one of the ham…

According to Oldest Daughter, this ham was better than the one we cooked at Christmas. I know there were fewer leftovers…

I cooked a small ham in the regular oven Sunday in case the Beef ribs went wrong as a backup. No ham for me!

How long total time were the sweet potatoes on the grill? I ask because my mother in law loves them and I could add them to some cooks.

These were on the smoker for more than 3 hours, but that had a lot to do with the lower temps I had yesterday (largely due to the wind). The WSM stayed below 250°F for the entire cook, and spent most of the time at 225°F or less. I’ve been able to do these much quicker on both the WSM and Bubba Ho-Keg at higher temps. I would avoid putting them right over the coals; the ideal temp seems to be in the 350-375°F range. The other factor is the size of the sweet potatoes; I try to keep them pretty similar.

The best test is to stab them with your thermometer probe or a fork; if they slide into the center real easy and come out with just a bit of potato on them they are likely done. Or you can leave them on longer if you like them mushier.

No, because he has trouble showing up due to his other contributions to ABTs and MOINK. You might say he doesn’t have a leg to stand on. Or the stomach for it… ;)
