Today is Cinco de Mayo, a bigger holiday in the US than in Mexico. And no, it isn’t Mexican Independence Day like a lot of US citizens seem to believe. So what better way for a bunch of gringos to celebrate than to cook up some fajitas and make a batch of soft tacos?
Start with a grill full of chicken breasts dusted with chili powder, garlic, and cayenne pepper. Make enough so there will be plenty for lunches…

When they are done, slice up a few and mix with onions, peppers, and some fresh tomatoes. Toss in some chipotle sauce for good measure and mix thoroughly.

Let that cook for a few minutes while you heat up some of those tasty handmade sun-dried tomato/habanero tortillas from TJ’s. Take a real crappy picture of a real tasty soft taco in an effort to try something more artistic and post it below.

Eat and enjoy. Don’t eat cinco by yourself. They are good, but they are also filling…

Today was burrito day at work, so viva the mexican food!
This weekend is my first cook for a small crowd and I am very nervous! I picked up some great beef back ribs tonight and a set of pork baby backs. Some burgres and dogs will round it out for the kids. Remain calm, remain calm.
You’ll be fine. The kids won’t complain about burgers and dogs, and unless you have some serious food critics the adults will likely be real pleased with a choice of beef and pork ribs.
And remain calm. Easier to deal with challenges when you are calm…
