… but who am I to complain. After all, if it wasn’t for Auntie we wouldn’t be looking forward to traipsing through Jolly Old England and sampling the wares at the Guinness Storehouse and Scotch Whisky Experience while on vacation the next two weeks. Somebody has to watch the kids, dog, and house while we’re gone. So last night we filled up Bubba Ho-Keg with Cajun shrimp.
Yeah, I know, I’m slipping and falling behind on the posts. Get over it, I’m in vacation mode. The shrimp got the usual treatment; stabbed with wooden sticks, powdered with Cajun seasoning mix, then bathed in a mixture of butter, cayenne pepper, and red chili powder while grilling.
Sides were nothing special (brown rice, mixed greens with dried cranberries, walnuts, and a bleu cheese vinaigrette dressing) , but seemed to be greatly appreciated by the guests. Oldest Daughter showed up again; she’s getting around pretty well in spite of the pins in the thumb of her primary hand. Amazing how people are motivated by free meals.
I’ve been informed that spatchcock chicken is on the menu tonight, and there have been hostage demands for grilled veggies. But don’t count on a timely post unless all my packing is done.
