Repeat after me: MOINK is not a vegetable. And with all the MOINK dishes lately, we haven’t had a lot of roughage around here. So tonight we made up for it by cooking a bunch of green stuff, some fruit, and for good measure, some Cajun shrimp.
The foil package contained some fresh green beans from a local farm mixed with chopped onion and mushrooms with a bit of wine, EVOO, butter, minced garlic, and slivered onions. Those round things on the grill were donut peaches cut in half and brushed with blueberry honey. The shrimp was basted with a mixture of melted butter, Cajun seasoning mix, and cayenne pepper. It all came together well with the asparagus drizzled with EVOO and sprinkled with a little garlic seasoning mix, salt, and pepper.
Ok, I suppose all the butter might have made the meal less healthy than it could have been, but Oldest Daughter and I made pretty quick work of all that food on the grill. All in all, a great meal and a nice change of pace.
