Cheesy Meatloaf

In the wake of the 2010 MOINK Ball Challenge and following a day where I completely trashed the kitchen for yet another delayed post, I needed to cook something that took very little prep and didn’t make a mess. The solution was some cheesy meatloaf and the cheapest corn we’ve seen all year.

The meatloaf was a combination of ground beef, pork sausage, onions, peppers, mushrooms, some fresh herbs (rosemary, sage, and thyme), an egg, some oatmeal, and a splash of Big Butz No Butz sauce to give it a little zip. Shredded cheese was sprinkled over the top during the last five minutes of the cook.

I remember commenting to SWMBO that there should be plenty leftover for sandwiches the next day. So much for that prediction; this thing disappeared before I could even get a picture of it on my plate…
