Pulled Pork and Potato Pie

I cooked up a couple of pork butts over the weekend and have been eating more than my share of pulled pork quesadillas and sandwiches the past few days. Inspired by Cowgirl’s Pulled Pork Pie, I set out to make a No Excuses BBQ version and try it out on Pigdog.

As per Cowgirl’s instructions, I oiled up a cast iron skillet and added a layer of thinly sliced potatoes.

In went a heaping portion of pulled pork, some sliced Walla Walla onions, and a fair amount of Big Butz BQQ No Butz sauce. For those paying attention, this is the hot stuff (and I have it on good authority that it comes in gallon containers now).

A layer of shredded Mexican blend cheese went over the top of this, and then it was time to deviate from Cowgirl’s recipe. Another layer of potatoes, pulled pork, onions, sauce, and cheese was added to make this a double-decker pie. On top of that went another layer of potatoes and the whole thing was topped with cheese.

The pan went on the Performer set up for indirect cooking and spent about an hour uncovered at 375-400°F.

The final result was pretty darn good. I cut it into 4 large servings and was actually able to get it out of the pan in more or less one piece.

The No Butz sauce gave this a real nice bite, and the flavor was great. No complaints were registered by Pigdog, although we both agreed that the potatoes could have been cooked a bit longer; next time I think I will use a Dutch Oven with a lid rather than the uncovered skillet.

And there will be a next time; this recipe is a keeper.
