Birthday Brisket

For those of you that grew up in Southern California and are old enough to remember Sheriff John when they were a kid, he used to sing a song called “Put Another Candle on My Birthday Cake” every day on his show (about the 2:45 and again at the 4:45 mark on that video). Today was Younger Daughter’s birthday, and we did a slight variation on the theme with a brisket. It went on the WSM last night before we toddled off to a midnight showing of the latest Harry Potter movie, and looked pretty nice when I finally dragged myself out of bed this morning and went out to check on it.


Since this was done so early in the day I sliced the flat and put it away for another day, then turned the point into burnt ends. They got another treatment of rub (today’s variation was Cajun Seasoning mix, granulated garlic, salt, and fresh ground black pepper), then after about 90 minutes on the smoker received a nice slathering of Big Butz BBQ Sauce (the Hot variety). Another 30 minutes and it was time to eat…


Trashbag potatoes were originally on the menu, but I convinced Younger Daughter to have some homemade potato salad instead. Gave me a chance to use up the rest of those fancy taters I came home with last week. As it turned out, there were no complaints.


We’re cooking our big Thanksgiving dinner tomorrow so that Oldest Daughter can partake; negotiations continue on whether or not the turkey will be cooked in the house or outdoors. SWMBO enjoys the smell of the kitchen when it’s cooked indoors, but I prefer the flavor of the turkey when it’s cooked outdoors.

I’ll leave the canopy up over the WSM and Ranch Kettle just in case I actually get my way this year…
