We have a tendency to stock up on meat when it’s on sale and fill up the freezer. Even though we had game hens recently, the need to free up more freezer space prior to the next set of holidays took precedence over wearing out a particular dish. And those game hens take up a lot of space.
In order to change things up a bit I spatchcocked the hens, sprinkled them liberally with some Big Dicks Dry Rub, and threw them on Bubba Ho-Keg with some sweet potatoes.
The final result was very good. There was a fight over the skin as it was not only tasty but crispy as well. You’ll also notice that the cranberry sauce made it to the plate for the picture, unlike the Thanksgiving meal.
But it didn’t stay there long…
