Fall Color Fish

Lets face it, Fall is almost over. Around here, the leaves have all fallen off the trees (at least the deciduous ones) and long turned into a slimy mush from the rain. We’ve already had snow and are in the middle of more cold-related plumbing issues. But that doesn’t stop us from cooking up some colorful dishes to remind us of the season.

Yesterday’s offering consisted of mahi-mahi fillets covered with a mixture of chopped green onion, red, yellow, and orange bell pepper, jalapeno pepper, and a couple of heaping tablespoons of orange marmalade. Add to that a pot of simmering carrots with balsamic vinegar, brown sugar, and garlic and all you need is some nice brown rice for a meal.

Oh, wait…


The topping for the fish was enjoyed by at least two of us (those that enjoy peppers and onions on just about anything). If I was to do it again, I’d pre-cook the topping and pour it on at the end rather than cooking it directly over the fish. The flavors were good, but they didn’t soak into the fish well. Those that scraped it off before eating mentioned that the fish was a bit on the bland side.

But you have to admit, it was colorful…
