As promised in last night’s post, the leftover twice-baked taters reappeared on the menu tonight. In fact, they went on the grill to reheat and became thrice-baked taters.
They were joined on Bubba Ho-Keg by some mystery foil food and Cajun chicken breasts. Actually, the chicken was spiced up with some King of the Cajun Blackened seasoning. Good stuff, and different from the usual Cajun seasoning mix that we use a lot when we are too lazy to mix up our own.
The foil food was a package of onions and another of mushrooms. Ordinarily I’d cook these together, but Pigdog doesn’t care for mushrooms and I get tired of watching him pick through the veggies at the table. That was his plate in the post image, and if you look closely, you won’t see any mushrooms on his plate. I wasn’t paying attention at the time, but I’m pretty sure he was picking them out of the salad when I wasn’t looking.
Oh, and the leftover flank steak with the marketing department ended up on the salad. Wasn’t bad when smothered with bleu cheese dressing…
