What happens when the package of pork chops removed from the freezer don’t thaw in time to be cooked for dinner? Some folks might resort to the microwave, or even the hot water bath. I put them back in the freezer and resorted to leftover pulled pork. In the form of tacos.

So dinner went from a whole bunch of cooking to an easy assembly line thanks to those frozen pork chops. A quick batch of simple cabbage slaw (cabbage, onions, mayo, balsamic vinegar, salt, and pepper) was whipped up to go on top, a little Big Butz No Butz Sauce employed to spice them up, a sprinkling of cheese, and it was time to eat.

If I didn’t know better, I might suspect that this was planned from the start. And there were zero complaints from the peanut gallery…
