The Auntie Challenge Meal

We have a house guest this week that has heard of the monthly challenge meals but isn’t quite up to speed on the actual rules. Consequently the “challenge” Auntie posed for me tonight was about the easiest one I’ve had yet, especially since there were only two ingredients to deal with; fish and fresh basil.

So the BS Keg was fired up to about 350°F and on went some nice tilapia fillets covered with a mixture of fresh chopped basil, lemon juice, EVOO, minced garlic, salt, black pepper, and a fair portion of cayenne pepper. 20 minutes later we were ready to eat.

Auntie was pleased, so I guess I successfully met the challenge. Do me a favor and don’t let her know that this wasn’t much of one…
