Pulled Pork Salad Rolls

Leftovers were on the menu today, and I was cooking for just myself and wanted something different from the normal routine. One of the Asian restaurants we frequent serves fantastic Vietnamese salad rolls and I wanted to see if I could make my own version and do justice to them. So out came some of the leftover pulled pork, a lot of fresh veggies, and some fresh basil, mint, and cilantro.

I picked up some spring roll skins at Whole Foods, and followed some great assembly instructions I found after searching around on the Internet. After a bit of practice, I was able to successfully build one worthy of a picture, and actually incorporating all the ingredients from the first picture.

The noodles were rice noodles mixed with a dash of sesame oil and hoisin sauce. Dipping sauces were out of bottles; I haven’t been able to make a better sweet chili sauce than Mae Ploy, and was too lazy to make my own peanut sauce tonight.

Another interesting thing is that although these are usually thought of as appetizers, they become a meal if you eat enough of them.

These will definitely show up on the menu again in the future. In fact, I still have some leftover pulled beef in the refrigerator and some Big Butz No Butz sauce that might kick these up a notch or two…
