Pigdog’s Long Pork

Pigdog showed up tonight with one of the longest pork loins I’ve ever seen. But who am I to complain? Instead, I smothered it in Simply Marvelous Sweet & Spicy rub and threw it on Bubba Ho-Keg with some trashbag taters and string beans in foil. I’m happy to report I am finally out of string beans…

The biggest issue with cooking this monster as a single piece was the ends got a lot more heat from the convection action of the heat as it comes up the sides of Bubba Ho-Keg. As a result, the ends got a bit more done than the center, but at least they didn’t dry out. The end result? Excellent flavor, and no complaints from Pigdog, who looked like he was ready to pass out after dinner.

I’m guessing that the leftovers are going to make for killer sandwiches later this week. Or maybe even later this evening…
