Another day, more leftovers, and another way to experiment with the jar of Carolina Magic I whipped up the other day. Today’s lunch: Carolina Magic Pulled Pork Tacos.

Now this was a much better way to pile up the pork and slaw than on those nasty hoagie rolls we had the other day. The tacos were simple: a pile of leftover pulled pork, a stack of dressing-less cabbage slaw (again, leftover from last night), a few corn tortillas, a nice drizzle of Carolina Magic, and lunch was served.
And for those that were wondering, the tomato and avocado slices in the background also found their way on to the tacos. This might have been one of the best lunches I’ve had in quite a while. Makes me wonder if dinner might be a repeat…

Colorful food! I can say left over pulled pork is great because I actually have some!
At the rate mine is disappearing I’ll be out soon. Guess I’ll just have to make more…
Had pulled pork today with yet another different variation of Carolina Magic. Seeing these pics makes me hungry for it all over again. Unfortunately I was a nice guy (stupid) and gave the leftovers away!
Now you know why I always cook way more than I need. Someone always seems to be around when leftovers are being distributed…

This looks amazing, Paul! Even the naked slaw.
I’m digging the naked slaw thing. It allows you to monkey around with different dressings and toppings and keeps better in the refrigerator.
