What happens when you substitute one ingredient from a challenge meal the next day? Depending on the ingredient, you get a much more satisfying meal (not to mention use up the rest of the ingredients). In this case, we substituted this for the tofu:
We also learned from the previous day that the taters need to be off to the side, and that feta cheese goes well with watermelon. Turns out it goes well with strip steaks as well…
Both kids were heard to say that tonight’s meal was much better than the challenge meal. I believe I also heard a request that I never grill tofu again.
