In fact, we’re so tired of turkey that the frozen leftovers may stay in the freezer until well past Easter. The last of the refrigerated leftovers went into a nice pot of Turkey Curry on the BS Keg.
This pot not only got rid of the rest of the turkey but it also aided in the removal of two jars of store-bought curry sauce that had been in the cupboard way too long, and a bunch of veggies that were approaching end-of-life. Add some cayenne, a bit of wine to rinse out the curry jars, and you now have the recipe we served over long grain brown rice for tonight’s meal.
There were a couple of complaints regarding not enough sauce (the opposite complaint I hear whenever we order curry in a restaurant), but there weren’t any leftovers. Not a bad use for the last of the turkey on a day that definitely called for some warm food.
