Today was a better day than yesterday at work, so what better way to celebrate than to BBQ again.  That’s right, I don’t need much of an excuse…  The chicken breasts were coated with some Rib Rub, mainly because I had so much left over from the last time I made ribs that I am still trying to use it up.  I figure about the time I run out it will be time to make another batch of babybacks, if for no other reason that I’ll have some leftover rub to put on all kinds of other things.  As usual, I cooked up extra breasts so that we would have leftovers for salads, lunches, or midnight snacks.

img_0248The apples were for dessert, and were sliced thinly, thrown on a sheet of foil, and treated to some butter, brown sugar, cinnamon, and fresh ground ginger.  They were then wrapped up and set on the grill away from the coals; when it came time to remove the chicken, they got moved directly over the coals.  The end result was like apple pie with peels instead of crust.  They got served over vanilla ice cream, and disappeared in seconds.  I guess they must have been ok…

Another beautiful spring day…  Chilly most of the morning, but almost downright tropical by the time I got around to cooking.  Today was another one of those days that you can hear begging you to come outside and cook.  Who am I to argue with Mother Nature?
