Tonight’s challenge was cooking with an almost empty pantry. Fresh vegetables were at a premium, as were many other staples. Guess I know where I’ll be tomorrow.
Undeterred, I made do with what we had on hand. A pepper-pineapple salsa was mixed up using the remaining fresh peppers on hand and a few jalapeños from a jar and pineapple from a can, then cooked in a foil pouch on the grill with a few tilapia fillets dusted with McCormick’s Cajun Seasoning Mix. I’ll spare you the grill photos and skip right to the finished product.
These were messy, but very good. And the entire meal took about 30 minutes to prepare from start to finish. And a lot less than that to eat.
Just goes to show you what can be done with a bit of imagination and the contents of the cabinets…
