It’s been awhile since I grilled any fish outdoors, so I dug through the freezer and came up with some mahi-mahi fillets, which were then paired with some lemon slices and herbs.  The results were outstanding, enough so that I felt compelled to open up the Seafood page in the Recipe section with this one.

That funny looking pot on the grill was rescued from the camping equipment and pressed into service to cook up the baked apple slices.  I was looking for an alternative to throwing out all that aluminum foil, and happily enough this pot worked pretty well.  I’m not happy with the lid, and will continue to look for alternatives.  Look out thrift stores, here I come…  Any yes, by popular request (well, one person responding to a BBQ-Brethren post) the recipe is now posted in the Desserts section for all the world to see, use, and enjoy.

March is such a fun month around here.  We had almost 3/4″ of rain today, part of which appeared in the form of very large hailstones.  The gutters clogged, the backyard filled up with water in all the low spots, and the sun came out just in time to grill.  The wind was also nice enough to die down from gusts of up to 30mph to a reasonable 6mph at cook time.  Another perfect day to BBQ…
