It’s about time

One of the advantages of doing this blog is that I get a real good gauge on when I’m in a rut, and also when I haven’t done something in awhile. And it’s been two years and a day since I wrapped food in a bacon weave. So it was about time I corrected that.

This is what happens when you defrost a large package of bacon for breakfast and discover it is thin sliced. Which we normally reserve for MOINK and other bacon-wrapped foods. So tonight bacon-wrapped mini peppers and meatloaf were on Bubba Ho-Keg.

The meatloaf was made up of ground beef, onions, peppers, cilantro, oatmeal, egg, and Big Butz No Butz sauce. The loaf was formed, wrapped in the bacon weave, and then sprinkled with Simply Marvelous Pecan rub. The mini peppers were stuffed with goat cheese, chopped Canadian bacon, and cilantro, and then wrapped with bacon. I used a technique I picked up from Chris over at Nibble Me This that used bacon sliced lengthwise prior to wrapping. This is a far superior method in that it allows you to pinch an end of the bacon between the pepper and cap, wrap the pepper, and avoid the use of toothpicks. The bacon covers the pepper better this way, although in retrospect I should have used a whole slice per pepper rather than a half slice. For mini peppers, these were pretty good sized.

The only complaint from my dinner companion tonight was that I didn’t make enough of the peppers. I’m going to assume that means the rest of the meal was good, especially since I had to do some fast talking to insure we would both get a meatloaf sandwich for lunch tomorrow.

Hard to make sandwiches with leftover meatloaf when there isn’t any leftover…
