Ok, we had these last night, but since I didn’t get around to posting them until now you get to enjoy them all day. And last I checked, today is Tuesday. Trust me when I say I don’t always get that right, thus the need to check.
Did I mention that we had leftover pork from Saturday? The tacos were made with some of the chopped pork heated up in a frying pan with some sliced peppers and a dash of Chipotle Tabasco, shredded cheese and lettuce, and stuffed into corn tortillas fried in the tradition of Pigdog’s greasy tacos. Simple, quick, and tasty.
Good luck getting something this good at a local fast food joint. And no, we don’t have a drive-thru…
Disclaimer: I paid full price for the Chipotle Tabasco, but we use so much of it I wouldn’t object to those folks showing up and offering me some in return for good press. Who knows, I might even offer them a taco.
