As usual, the beans were shy and hiding under the ribs on the lower grill of the WSM. The ribs were country-style, which means they aren’t really ribs. But they were really tasty after being rubbed with Simply Marvelous Cherry, then basted with a cherry-onion reduction (one can of pitted cherries, half an onion, a spoonful of brown sugar, a dash of salt and cayenne pepper, and a splash of balsamic vinaigrette brought to a boil, hit with an immersion blender, then simmered until reduced to a sauce) the last 20 minutes of cooking.
The beans were excellent, the leftover ribs went home with Pigdog and his crew, and everyone was happy with dinner. Best of all, I didn’t have to make the salad, and there were plenty of dressings to choose from.
Maybe I should have Pigdog make the salad more often…
Disclaimer: I paid full price for the Simply Marvelous rubs and would gladly do so again in the future. As for the canned cherries, they were some that SWMBO bought for half price and were best used as a sauce before they ended up in something really important. Like a pie.
