Today was all about tomorrow. LizBob are coming for pizza tomorrow night, and none of pizzas planned for the menu are what I would call “traditional”. As a result, tequila-lime chicken thighs were on the menu tonight so that there would be leftovers for one of the pizzas tomorrow.
For those interested in how things get made, boneless-skinless chicken thighs were marinated in a mixture of tequila, lime juice, cayenne pepper, chopped cilantro, and a dash of salt. Based on this, some of you might be able to guess at one of tomorrow’s pizza toppings (in addition to the chicken). The rest of you will have to wait until tomorrow.
And since there were limes on hand, a corn and black bean salad (with onions, peppers, tomatoes, lime juice, cilantro, ground cumin, and salt) was made up in advance, spent an hour or two in the fridge, and was served over a bed of lettuce with the chicken.
That’s right, I was lazy and made another easy meal tonight. Tomorrow will be a different story…
