Weekend Review

Oldest Daughter was over for dinner last night, and I did my best to mess up her diet by fixing chicken thighs and twice-baked potatoes. The chicken was rubbed with Simply Marvelous Spicy Apple; this was the first time we’ve tried this, and will definitely be using it again. And although the taters weren’t the over-the-top variety with bacon, sour cream, green onions, they did have some crumbled feta cheese mixed into the mashed portion of the potato along with the rest of the usual suspects (butter, milk, garlic, shredded cheese, paprika, pepper).

One problem with fixing four taters when five people are eating dinner: fights ensue over who gets a whole potato and who has to share. I want to go on record as saying I had to share. I made up for it by eating extra chicken…

During dinner the subject turned to comfort food, and the subject of meatloaf came up. Interestingly enough, it appeared on the grill tonight. The power of suggestion is real…

Tonight’s offering was a combination of ground beef, ground pork sausage, onions, peppers, mushrooms, and the usual binders (egg, ground oatmeal, parmesan cheese) plus the addition of some shredded Mexi-cheese, fresh basil, and a fair amount of Big Butz No Butz sauce.

Unfortunately for Oldest Daughter, she missed out on this meal. As it stands, I had to chase off the younger set as left to their own devices there wouldn’t be any leftover for sandwiches tomorrow. Although this meatloaf was great right off the grill, it is always better the next day on sandwiches.

Now if I can just get the younger kids to forget it is in the refrigerator…
