Ribs, Aye!

Having barely recovered from our respective meat comas, Pigdog and I set out to return to the world of extended bellies and assisting gravity in holding down couches after dinner. Last night we followed up the ribeyes with ribs, aye…

The taters in the background were leftovers from the night before; I guess that makes them thrice-baked. Add in some corn on the cob cooked in the husk, leftover salad from the night before, and we called it a meal.

The ribs were rubbed with a equal parts of Simply Marvelous Cherry and Pecan rubs, cooked on Bubba Ho-Keg for a few hours, then glazed with a Huckleberry Habanero pepper jelly I found in the back of the refrigerator. The end result was another meat coma.

I think I’ll stick to salads for the next couple of days. Probably just as well that my schedule doesn’t permit outdoor cooking again until next week…
