Ain’t Pasta

One might ask why I cook some meals outdoors. And the best answer would be “because I can.” Tonight was one of those nights, and one where not everything is as it appears. First off, the finished dish:

Angel hair pasta with meat sauce, right? Nope, just looks like it in the bowl, while on the grill it looks like a couple of large spaghetti squash.

This has to be one of the easiest meals ever made outdoors on the grill. The sauce was ground sausage, onions, garlic, and mushrooms in a mix of tomato sauce, crushed tomatoes, white wine, and Italian herbs and spices. It cooked away in the pot while the spaghetti squash was roasting. Total cooking time was about an hour at 275-300°F.

For those of you that haven’t tried spaghetti squash we highly recommend it, especially if you are trying to cut back on the refined carbs or have gluten issues. It isn’t anti-pasta, it just ain’t pasta…
