Messin’ with Meatloaf

Meatloaf has become like pizza around here. It’s almost never the same way twice, and we like to mess with the ingredients. Translation: I use whatever is in the house at the time for ingredients. Last night it was ground beef, chorizo, onions, peppers, mozzarella cheese and sun-dried tomatoes.

The standard oatmeal, egg, and BBQ sauce binders were in there as well. Speaking of pizza, if you substitute pizza dough for the oatmeal and egg, you might find the the rest on a pizza at our house. Maybe I need to look into making oatmeal pizza dough.

There won’t be any meatloaf sandwiches today as it all disappeared last night at dinner. I guess that means that the meatloaf mad science experiment was a success…
