Sometimes we mess with success. I’ve always had great results using my standard pork butt recipe, but when you combine lazy with a lack of key ingredients the experimentation begins. And in this case, lazy was the operative word. Out came the Simply Marvelous Pecan Rub, and following a healthy dusting on the WSM went the butts. After several hours, the butts were heavily slathered with Big Butz No Butz sauce and then left to cook for another hour or so.
The butts were then foiled, then left on the grill for another hour. By this time I had convinced Pigdog that it was in his best interests to cook all the sides so that he could have some of this.
I did mention I was being lazy again, didn’t I? We went through the smaller butt last night at dinner, but I did manage to hang onto some leftovers for sandwiches today (and pizza later).
I guess I really ought to vacuum seal the rest of the pork and put it in the freezer if I expect it to last long enough for pizza. Ziploc bags in the refrigerator lend themselves to disappearing pork.

The pulled pork was awesome. You can “lazy” Q this recipe anytime for me and I’ll be ready to chow it down !!!!
Rumor has it that pulled pork tacos are on the menu tonight in case you just happen to be in the neighborhood…
SM Pecan is hands down my favorite rub in the universe. Great looking butts man. Nice cook.
Stephan makes awesome rubs. I think cherry is my favorite, but the pecan was great on the butts.
