The boss is out of town and due back tomorrow. Based on what I cooked tonight, I suspect I’ll be in trouble by the time she gets home. We had some potatoes that needed using, so Cheesy Taters were on the grill.
Technically, they were in the dutch oven on the grill, but I don’t think pointing that out will keep me out of trouble. As usual, the Cheesy Taters were made by adding layers of sliced potatoes, onions, and cheese, repeating the process, then adding a layer of potatoes and topping with more cheese. Salt, pepper, and BBQ spice was added after each cheese layer. Put on the lid and cook until the taters are done and you have a crispy top like this.
The pork chops were grilled with a sprinkle of Simply Marvelous Spicy Apple Rub; nothing overly special, but still very tasty.
SWMBO likes Cheesy Taters, but she doesn’t care for the onions (which usually end up on my plate). But as I said earlier, I’ll likely be in trouble tomorrow.
Did I mention there weren’t any left over?
