SWMBO made the mistake of talking about bacon tacos recently and sending me links to various sites with pictures. To be more precise, tacos made with bacon “shells” in place of tortillas. Today she made the mistake of leaving the kitchen unattended with bacon in the refrigerator.
Bacon and eggs will never be the same again.

I don’t normally cook bacon in the microwave, and if I’m ever allowed to do this again I’ll get out the thin sliced bacon I use for MOINK rather that the thick sliced bacon we use for, well, everything not wrapped in bacon.
How about another angle?

For those that must know, the filling was scrambled eggs, shredded cheese, avocado, tomato, and chopotle flavored Tabasco. The avocado went on there so that there would be something green for St. Patricks Day. Tomorrow I might even turn some corned beef into pastrami. Better late than never.
Or who knows? I might thaw out some of the thin-sliced bacon and see if I can pull this off on the grill…

Man, that looks great.
It was a labor of love, and I am unashamed to say I didn’t share any of it with the family. Now where did my couch go?
Do you think that it was “too much bacon” to enjoy or did it balance out? I’ve been wanting to try one of those crazy things.
The “shell” was too thick and not as crispy as I would have preferred. I believe that using the thin-sliced bacon that you can still get away with a bacon weave and it wouldn’t be “too much bacon” (if there is such a thing).
For those wishing to give this a try, it took 8 strips of bacon, 2 of which were cut in half. I made a 3 x 3 weave, then used the half strips on each end. The bacon was cooked in the microwave on paper towels until done, then draped over a “tent” made from an aluminum turkey cover and let dry into a taco shape.
At some point I hope to be able to figure out a way to do this on the grill over a rib rack, but need to figure out how to deal with the bacon grease so that it doesn’t flare up, smoke, or generally filthy up the grill.
That is now on my R&D list… Looks great…
